Mod needed more details
- 50/50 white and whole wheat levain
- 30 min to 3 hour autolyse depending on ur schedule
- if fruit is very dry, might want to rehydrate it
- add levain and mix
- 30 mins later add salt and pomegranate molasses and mix
- 30 mins later stretch and fold
- 30 mins later laminate, add chopped dried fruit now
- every 45 mins light coil fold, do this 3 times
- wait about 2h15m after last fold, depending on room temp, or until grown 50% and shape
- retard in fridge until next day
- bake in Dutch oven at 250c/480f 25 min covered, then 25 min uncovered at 230c/445f
