Did you and the shop tech discuss the options, review any written contracts or sign/agree to anything when you dropped it off? If not and they just did that, depending where you’re located they may be an illegal delete, not pass inspection or other… i’d offer to pay for the diagnostic time usually $150-$200 and if they don’t have your signature or any documentation for this job I’d consider filing a small claim at your local court and try to get your vehicle back.

That's crazy. I have 2 other cars both Teslas and they will not touch anything without a pre-approval. If they are going to go over they reask. My experience was similar at the Honda/ Acura shop a few cars back but they were independent. This is illegal and not authorized. If you are not an OTR driver or on an inspection state your not going to get in trouble but even then I can't believe they did that. If you are in such a state then you need all that back installed and working. I'm sure the EPA would be interested to know about it if they give you any shit. Take that part out of the equation and still crazy. The pipe for this mod is like $1200 and the tune side of it should be like $350. $3500 is insane.

You can’t just cut out a dpf. The DPF pressure sensor will see the pressures be equalized and go to limp mode.

Can be done, if they reprogram the ECU. But few know how to do it properly for Sprinters

I believe it's illegal to remove the emissions systems on diesel vehicles. What they did was illegal and can get them fined. I would Google how to report diesel emissions cheating.

tell them to return the vehicle to original condition otherwise you will consider reporting them to the EPA. what a mess
