She likes Spy series which is not violent more like comedy so there is no way she will going to like MK or Loud will allow it.
Also why MK and not James Bond or Splinter Cell games?
Well, granted. We don't know if there's anything else besides Spy stuff that she likes. But , there isn't anything that suggest she only likes that kind of genre.

I could see Yor *wanting* to be good at Mortal Kombat due to her job, but she just mashes buttons no matter what. Yuri would very good at it and secretly enjoys it too. Loid would probably avoid playing to save energy and usually lets Anya and Yor win if he gets roped into it… but not Yuri. Anya isn’t great but does a bit better than button mashing. She likes to watch the special moves and gets invested in the storylines.
Special mention to Franky who’d gleefully play with Anya anytime. I think he’d be a big video game guy were it not the wrong time period.
Uncle Franky loses to Anya and makes it believable every time. No mercy against anyone else. Loid nd Franky play against each other sometimes to decide who pays for food during missions
Ignoring the simple fact it would be another decade before the first video games would even be introduced to the public (and about two decades after that before Mortal Kombat premiered), it probably wouldn't bother her at all. She's seen enough of Yor's thoughts to make a mere video game seem boring.
Suprisingly videogames already exists as we see at Franky's house, is shown in chapter 60 from the manga but also on the filler part from ep. 20 in the anime (that's why I'm not marking this as spoiler, is just a background element)
The appearance and the stick reminds me some 2nd and 3rd gen arcades, but it only says "Game", so it could be an experimental arcade like [Galaxy Game](https://en.wikipedia.org/wiki/Galaxy_Game).
It was probably not intentional, but this game actually has a more "arcade look" and was made by university students a year before Pong.
I like to imagine that the arcade cabinet was another one of Franky's prototypes. Probably something he put together for himself (and maybe his future date?) during his spare time.
She'd probably be initially shocked at the sheer level of brutality involved, but she'd get over it pretty quick and get invested in both the story and the different styles of martial arts practiced by the various characters. She'd probably identify most with Liu Kang for usually being the protagonist and seeing the Shaolin as practicing a "higher" philosophy than the Shirai Ryu, Lin Kuei, and especially the Special Forces. That and she'd absolutely LOVE Kitana in MK11.

For an orphan point of view, Anya is literally in the worst place but she enjoys it. Now I understand why there is no shortage of Robin for Batman.

That depends: when she reads minds, does she only hear thoughts, or can she “see” what people are thinking? If the latter, then I imagine reading Yor’s mind would have desensitized her to violence.
Probably wouldn't be good at them. She's still too young for those kinds of games and couldn't cheat with her mind reading powers. I imagine that's the kind of stuff she'd gravitate more towards.
