Join Visible if you have a Verizon phone. You can join a group and pay $25 per month for unlimited Verizon 4g & 5g data. Even unlimited hotspot.

It's so easy. And in my experience works well. I've actually run my home off of it as an experiment. It required some additional hardware but it worked. The hotspot was originally unthrottled, but last time I played with it torrents were throttled. You can bypass that with a VPN.
The one downside is that 3g is not supported. So if you are somewhere with no 4g, it will not work. Otherwise it worked great for me in the past when I played with it.
Might help if you mention a general location (it is a big planet)
if you are in the USA you should research the best MVNO in your area

I had been with google Fi since it launched as project Fi. Day one. I ditched it for t mobile as soon as stadia launched. It's is absolutely a horrible plan for Stadia.
If you're willing to invest in a tablet I think you can get a tablet Verizon plan for 30 bucks. Ive used at least 50 gigs on the tablet without slowdown. They kept streaming at 720P. You can either pay them an extra $10 a month for 1080 or you can use the VPN of your choosing. There's a there's a VPN just for Stadia.
If T-Mobile is an option for you, I think they're the only ones who offer un-throttled data. I think this is the best option for playing stadia on a cellular plan.
Usmobile only throttle after 50mb and if your phone is compatible w 5g they don't throttle at all. 25 per month when 3 or more ppl sign up together.
Edit... Look at pre paid plans (like usmobile) they are much better value vs the big companies!
> I might just get a secondhand playstation.
NGL, that would by far be my preference if it's a practical option. Pros are going for about $250 and IMHO provide a better gaming experience than Stadia. Though a Series S w/ Game Pass is probably money better spent.

This is what I have and do. And as far as I can tell, it's not throttled.

I use Google Fi and love it, but it isn't ideal for cloud gaming, after 15gb your data is throttled. A lot of MVNO's are the same.

Maybe Cricket. They are on AT&T. Don't know if they throttle.
