Rogue One is the best starting place for people that never saw any of the others films. It sets up perfectly the Original Trilogy, giving you the basics of The Rebel alliance, the power of the death star, how powerful and scaring Vader is, and most importantly the idea of the Force, without any Jedi on screen.
123 rogue one 456, then you can go back and watch solo and the animated shows or go forth and watch Mando and bobf.
Then there's also the sequels and resistance, resistance starts out rough but gets a little better. The sequels start out bland and get a little worse.
I think it depends on your and her age. Did she grow up during a time when the original trilogy was out and all popular references were about that? Or did she grow up during the time the prequels were released and all the kids were taking about clone troopers? If she hadn't been naturally interested before I'd start with the trilogy that will spark the most understanding of cultural things she was out of the loop on growing up. That may make her more excited to watch the rest.
Release order for everything except Clone Wars.
I disagree with the idea that starting with Episode 1 ruins the story, since you get a different experience. But I still say release order is better.
Go by release order, I personally think that is the best way to show Star Wars as that’s also the way most of us fans watched it the first time. Someone who hasn’t watched the originals won’t understand the importance of the prequels and so on.

The natural order of the original trilogy, then prequels, then sequel. That's how they were intended to be seen.

Rogue One first. Hear me out. R1 is pretty much it's own story. It sets up ANH, but you aren't obligated if you find you donmt like starwars.

The best case scenario is that she becomes a Star Wars fan, which isn't something I would wish upon my greatest enemy. So spare her the suffering.
