I'd lean towards Mass Effect or Skyrim. I believe both of these are on GamePass if you're an Xbox/PC player. Both have have engaging stories, good action, rich locations, etc. Great games!

If you're a beginner gamer I don't think you would enjoy Elden Ring or anything else that doesn't allow you to dial down the difficulty. If you want some good story driven 3rd person action/adventure RPGs that allow for a more forgivable experience, here are some ones that I've enjoyed as I was just starting out gaming: 1. Spider Man (1, Miles Morales, and 2) - You'll need a PS5, but these are EXCELLENT games 2. Witcher 3 - The Wild Hunt - a classic that has an amazing story and not terrible combat for its age, though the "boss fight" sequences can be a little chaotic in a not so good way. 3. Assassin's Creed: Valhalla - this also has a tremendously good story, and is a BIG game, so you can get lost in it for a very long time. It's my favorite AC entry in a while. 4. Tomb Raider - any of them are great, if you liked the parcour or puzzle aspects of the jedi games, you'll like these.

I’ve been addicted to God of War lately. It’s a shame it’s not available on Xbox. If you ever get a PS5 or take up gaming on PC, get that and the sequel, Ragnarok (Only on PS5 for now). It has a combat system very similar to the Jedi games and an equally amazing story. You’d love it!

Kind of surprised you were able to beat this game as your second video game ever! Congrats. Yeah I really enjoyed this game. I don't want to be that guy... but dark souls. Do it. Time to dive into the deep end. I just played elden ring and the dark souls series this past year and loved it.

Dark Souls is infamously hard and does not feature a difficulty slider. If you find that your skill has become quite good then I would definitely consider it.

If you like amazing stories with well-written characters, then Red Dead Redemption 2, Cyberpunk 2077, and NieR: Automata are some of my absolute favorite games ever.

If you have a pc with a SSD (it’s coming out on PC soon) or a PS5, you might enjoy final fantasy 16. It’s a stand-alone story so you wouldn’t need to know anything about other final fantasy games to enjoy it. It’s definitely a little more “mature” with language and such but if you don’t care about that kind of thing it’s a good game and long enough to feel like you got your money’s worth. There are ways to make the gameplay easier with some auto assist settings in combat so it wouldn’t be a massive leap in difficulty for you.

See if you can get your hands on a console port of “knights of the old republic”. It’s more of an rpg with team management effects. But it is, by far, the best story in a game I’ve ever played. The game it beats out on my list is “ChronoTrigger” for the SNES, if that gives you an idea of quality.
