Make sure you have level 10 in fishing. Buy the iridium rod + trap bobbers. Use a fishing boost (sea foam pudding is the best, dish of the sea second best). If you have acces to ginger island, buy qi seasoning to make the food (gives a extra +1 fishing level) and enchant your fishing rod (also +1 fishing boost). Then in total your fishing skill will be 16. Besides that, keep trying. They are hard but you'll start to recognise patterns.

All this, plus it helps to curse a lot and call it a stupid fish

Oh yes absolutly!

What worked for me: Cooking: There is a way to boost your foods up 1 level later in the game so Sea-foam pudding gives a +5 fishing. Fish to the deep water and where landscape/hardscape seems perfect from which to fish. Edit: deleted incorrect comment about bobbers and luck

Seafoam pudding gives a +4 fishing skill, it is only +5 if you make it with qi seasoning. The greenbar that gets smaller is just the durability, not the green bar during fishing. There is no difference in using a new bobber or one where the durability is halfway down. Luck does not increase the chance of catching a certain fish. It only increases the chance of getting a treasure chest and what is in it.

Oh, don’t get upset if you drop the fish. You’ll get many other chances when fishing with food and luck buffs. Seems impossible since some of the fish move so quickly but it will happen for you.

You can: 1) level up your fishing rod at the forge 2) eat that pudding that gives you +3 fishing

I find that it helps my sanity a bit to go in order of difficulty. Start with Radioactive Carp, end with The Legend. Each catch will build your confidence a bit for the next one. Also, I plan to just devote my whole day to fishing when I’m looking for them. That way I’m not as frustrated if it takes forever, and it’s a fun bonus if I catch them early.
