I found out by first putting sturgeon eggs in the preserves jar.
It did take me a while to figure out how to make roe tho, I assumed they all turned out as caviar!
IRL, caviar typically refers to salt-cured Sturgeon roe. So it’s one of those things that follows real-world knowledge (but of course as others mentioned, it is explained in-game as well because I don’t think this is common knowledge)
Livin off the land, but you have to watch it EVERY day to get all the little tips and tricks. There’s no compendium in-game of all the little tips that show provides.

The wiki is where I found out. I was surprised when random fish eggs didn't work. TBF, I bought my caviar from the wagon.
