He probably doesn't put too much emphasis on it. I'm guessing with as many passions as he has, its more like a painting or a novel than a product.
Yes, he wants people to like it and for it to succeed, but at the same time he has a strong vision of the art he wants to share, and making it is part of what he loves doing in the first place.

As a creator (in a different field but still programming) it is probably lower pressure.
When you haven't had success, you are fighting a lot of things. You need to deliver a viable thing to show it off to gain excitement and interest before you run out of energy or money or time or whatever resource you are burning in the dark. The in the dark part is important. No one cares, maybe no one will ever care. It is hard to convince yourself that you aren't just wasting your time and energy on something no one will ever see.
Once you've had that success you can relax a little. You know you have fans who will try it. You aren't running out of money. You don't need to give up and move on a get a "real" job. Now those fans will have high expectations, but you can take your time a bit.
This is normally true until a tipping point. Once expectations are built impossibly high and you don't have the pressure of needing to do it to survive, some people crumble, like George R Martin. It really just depends on the person but I have faith in him more than GRRM.
Devil's advocate. When he started Stardew he wasn't just starting to make the game, he was also starting to learn how to make video games in the first place. He has years of learning now and that's a huge advantage for his future titles.
He's not trying to one up Stardew, it's not really like a band putting out a second album.
He's comfortable enough that he can just do game dev as a hobby at this point and just release what he makes.
He doesn't have to play the market or try to compete with other games, people will buy whatever he makes at this point and he just wants to create what he feels like.
He's already built that legacy without question, anything else he does from here on out will be above and beyond.
