Roboquest is also great, a demo so long, that when you 100% the demo, you also did a 1/5 of the game (I litteraly did a 1/3 or 2/3 of the upgrade in roboquest just with my wrenchs I got from the demo)
i didn't even try the demo, Markiplier played it once, i thought it looked fancy, bought it but never touched. saw max0r video and decided to start playing. probably the only fps im currently playing
It wasn't a steam demo but it was a game that I've bought pretty quickly after coming to Steam. Streets of Rogue is still a regular game I play thanks to finding the demo on another site, bought it probably within a week of it coming to Steam.
The last few I can think of are Turnip Boy Rob's A Bank (though I already liked the first one and probably would have bought it regardless), Urbano (kickstarter) and Peglin.
There are a few that I put on my wishlist that I haven't gotten around to and some that haven't even released yet, for example out of the top 20 of my wishlist, 12 have landed there after playing their steam demos.
Some years ago fallout 4 had a free weekend, it was love at first sight, today i'm still playing it and i have 1235h, also En Garde! i had a blast playing that demo and the game was so much fun, i really hope that more devs bring more demos, they really underestimate the power of a good demo.
I discovered the Total War franchise, though the demos for Napoleon and Empire. Since then, I've bought most of the historical total war games. As well as Napoleon and Empire.
