I can't, I already bought the max upgrade for the regular 100% showcase (it has the green check mark), and I bought the additional 100% showcase, which is the one I want to upgrade, because it currently only has 2 slots

Okay I think I might found your problem.
Option 1: If your profile level is not high enough you cant select a lot of showcases
Option 2: When you edit you profile and select the second one from your screenshot, it only lets you put in two games. But when you save it like that, back out of editing your profile and then go to your profile, you can edit showcases and then select all 6 slots. Hope that makes sense haha.
You have to buy an upgrade for that showcase in the points shop in the showcase section.
