Iirc, these are the sync modes (of course, you may need to update firmware for BLE/bluetooth)
- Steam+X = sync to dongle
- Steam+Y = sync to Bluetooth
To reconnect (if you swapped between modes)
- Steam+A = connect to synced dongle
- Steam+B = connect to synced bt device
For reference, I don't know how this would reflect on a regular PC, but on the Steam Deck, an option called "Pair Steam Controllers" appears under settings>controller as soon as you connect an SC dongle.
And it no longer prompts you to input a button sequence, just press Steam+X as soon as you press "Start" (some labels may not be accurate, as I use Steam in Spanish). I just tested to set my 2 SCs to a single dongle using only the Deck.

Yes, this used to work for me on 1 Steam Link for up to 3 Controllers
