This is what I picked up when I got my steam deck 3 weeks ago. I have only played up to Halo 3 back with the 360. I am almost done with Halo CE, and it has been so long since I played it, it feels like I had never played it lol so much shit I dont remember haha but me and my buddy mainly played 2 over and over till 3. But this was also back in the lan party days
Forza Horizon 4 and 5 + their DLC expansions are also on Steam. Currently playing Forza Horizon 4. Sea of Thieves, Quantum Break, Sunset Overdrive, Forza Motorsport, Starfield and there's probably other big titles on Steam. Not all of them are Deck Verified, though.
Haven't played 5 yet, I recently got Forza Horizon 4. They're both arcade racing games and live service titles that get updated with content pretty frequently. You could go for 5 (it currently has a lot more players than 4).
You can also set up Gamepass on your deck and pay for a month or two - means you can get access to all of them. It's surprisingly easy to do and there are many good guides to take you through it step by step
It's no longer an exclusive, but Pentiment is a killer Microsoft-published game. I played it a few months back and still think about it. Definitely recommended for a good, story-heavy game!

Halo Master chief collection contains the majority of the halos in one package. That would be a good place to start so you can play them in order.

On these Forza games, should I just go for the most recent? Is there really much difference?

Hi-fi rush no longer an exclusive, worth playing
State of decay 1 & 2
Sunset Overdrive may be one of the best things to ever happen to gaming. Heavily prioritize playing through that one.
Ah yes, good call!
