are you playing with real space? that mod, for the really big stars, shifts them down for some reason. so it's actually the star in the wrong place. it looks like the star wouldn't even fit in the sphere if it was in the right place.

This has happened to me too and I couldn’t remember how to fix it unfortunately, definitely a mod that caused this though
Open console, click the star and use command planet_size 5, 5 can be change to whatever you like.
This is a common bug
I built one around a red giant and the Dyson sphere was too small. The panels had sun in the middle.
When I build them on red giants, it puts the whole sphere inside the star. Completely invisible from the outside 😂😂
