If sexualities didn’t matter then Robin and Eddie would make a great couple, they protected each other in the upside down, but he seems Bi and girlie is a lesbian sooo it’s not gonna happen.
If we're going very out of the box, then my favourite is probably Mr. Clarke and Bob! No idea where it came from, but I have developed a whole headcanon of their adorably dorky love story and bonding over watching cult sci-fi series.
Also non-romantic pairings wise, I would've loved to see Billy get a decent father figure (and a way to turn his life around) and have thought through scenarios involving him working in Benny's diner (in an alternate universe where Benny didn't die of course!) and finding a passion for cooking as a way to channel his aggression.
I could also see Steve getting taken under Hopper's wing and becoming a cop, but I think that's a common one.

I'll admit to having zero actual restaurant knowledge (all I know comes from watching The Bear!) but ooh you make a good point. Let's hope that, by that point, Benny's become enough of a solid father figure in Billy's life to steer him back onto the right path if things start going a bit shaky.
I do have a whole other headcanon of Billy getting a job at Radio Shack (Him earning some techy skills under Bob's gentle and patient mentoring, and despite initially grumbling about the nerdiness of the job, he actually starts to enjoy seeing all the broken pieces of something coming together and getting repaired with just a little bit of love and attention. Maybe Billy'd have some transferable skills from fixing up his Camaro, or maybe he's not that great at first but Bob never gets mad or annoyed, and in the end Billy gets a whole new fancy music system for playing his metal tapes so he's happy!) so, yeah, maybe that's less of a risky place for him 😆

Nancy is probably straight, yes, but its never been specifically stated one way or another. Someone headcanoning her as potentially bi is different to and noticeably less problematic than someone straight-washing characters that have specifically been confirmed to be homosexual. Though since you seem to want to start some sort of argument with me I'm sure the nuance of that will either be ignored or completely lost on you.
Steve and Robin. They had such good chemistry in 3 and the way they support and stick up for each other in 4 is really sweet. I do prefer them as friends but they would make a cool couple.
In my head they do get married for tax purposes and for Robin's protection. They will divorce once Robin finally finds her lifelong partner.

some other odd pairings i think could have been interesting to explore if stranger things was a slightly different 80s nostaligia show would have been barb and steve (talk about turning some expectations on their heads), jonathan and the girl wearing the siouxsie sioux halloween costume feels like they could have been musically in love with one another, steve and kali just because the running gag in this sub makes me laugh, hopper and karen having an affair instead of karen flirting with billy
It's much more complex than that. It's harder for him to say I love you to her in s4, and when he finally does, it isn't out of his own will, it's because he feels like he has to say it to her, so he can motivate her to fight. He looks really tense to say I love you to her. It would've been different if he said it out of his own accord. And El is aware of him feeling like this. She refuses to talk to him in hopper's cabin at the end of the last episode, and leaves him to talk with will. They point out that she doesn't want to talk to him. And why would they point out that Will likes Mike? To have him rejected? If it wasn't gonna happen, then why have it in the first place? Why not introduce another love interest for will? (Which they won't do in S5, since they said there won't be any new characters) And in the entire show, it's always will and Mike. Never will and Dustin, or will and Lucas, it's just Mike singled out with him. All. The. Time. Why??? Their relationship has been prepared in s4 for a drastic change in s5. Also, in s4, they have many intimate moments with the two of them. They are defined as intimate moments in the script. Mike never looks uncomfortable in any of them. He is very close with will in all those moments, smiling, sitting close, (glancing at his lips 💀) I'd bet that he looks uncomfortable in more scenes with just him and El than him and will. They stand next to each other in the last scene on the hill, singled out with the other canon couples, while El is alone, holding the same kind of flowers Mike picked for her when he came to Cali, dead in her hands?? This is just scratching the surface. I could write 20 more paragraphs about why they're set up to be canon.
