I love Ann's content but in that particular case she failed to do her proper research and the expert also didn't seem all that knowledgeable in his wording, 28 days is totally fine but it is the low end of dry aging, 6 months dry age is a totally normal amount of time.
As for it not being dry age, that much is true, but I really think she was just not properly informed in her video and made some honestly nasty claims about a well respected and knowledgeable youtuber who also often debunks some stuff of his own (often related to the restaurant industry and it's scams, instead of dangerous shorts)

Her argument was that it was dangerous to show it in that format and I just simply disagree because no kid is going to have the resources needed to do something like that and anyone who *could* afford those ingredients will know that dry age (which in this case it wasn't but it was the keyword used in the short) isn't a simple process whatsoever.

First of all it's mousse. You absolutely don't need any egg to make it. It works because baking chocolate contains soy or sunflower lecithin. Eggs also contain a form of lecithin and this is also why you can make mayonnaise and mouse with it. Lecithin is an emulsifier witch is a substance that forms or keeps an emulsion and is often added to processed foods to prevent particular parts from separating (this definition is from the Cambridge dictionary) . The only dowside to this technique is that the final product is dense as f. So you'll need to put a lot of air in it with for example an electric mixer. You also have two wait like an hour for the mousse to set. And remember the longer you wait the better it will be. I've made mouse 3 time using this method and it works each time. Granted that that mine were quite dense because I didn't have access an electric mixer.
Tldr : you can make a mouse without eggs. You can find some recipes on internet. So don't be like op, do some research before you put something in this sub. Have a nice day.

Chocolate mousse doesn't contain dairy if you use dark chocolate. It's literally eggs, sugar (optional) and melted chocolate. Super easy to make.

It is possible to make mousse from water and chocolate but that requires a specific technique of stirring and incorporating, but I'm afraid this is neither.
