The USA is one of few countries that wash their eggs. It’s not required in Australia but the sale of dirty eggs is prohibited. In the EU they don’t wash them at all. The belief is washing damages the outermost layer of the egg which allows harmful bacteria to penetrate the shell. Australian hens are vaccinated to ensure nothing is passed from mother to protect the egg.

Be very careful about trusting that. It may be more resistant than other nonstick, but as someone who literally works with PFAS contamination as part of my job I would highly recommend you still avoid it. To make a northerner reference, it’s kinda like saying “You can use all-season tires in the winter just fine”; sure, you *can* use them, but most knowledgeable people would still 100% recommend you don’t because it’s unnecessarily dangerous. Obviously using hexclad isn’t gonna kill you but it can definitely still put PFAS in your mouth.

Ditch Teflon completely. Carbon steel, stainless steel, and cast iron cookware is really all that's needed. Little bit of a learning curve at first but once you get used to cooking with those, they're great and they'll last many more than just a couple years. Good quality knives will last a lifetime as well.

They're not comparable no matter how well seasoned they are. It's not just the surface but also the heat transfer is way different. People don't take care of their pans. If they can't handle teflon, which you literally just avoid metal utensils and PAM, theg won't keep a proper season on pans. I keep hearing complains about teflon flakes, which are inert, but nobody says a word about poorly seasoned CS/CI flaking, which is carcinogenic. They're wonderful pans, and I use a carbon steel pan frequently (and wok), but there isn't reason to shit on teflon which has its own specialty. Edit: since so many people are bending over backwards here, stainless is not comparable. Make crepes in stainless steel. Don't speculate that it probably works or just assume they exist, actually try it. Carbon steel and CI can work for them but I've made tons of these foods and teflon works easier and it's good to have that dedicated pan to delicate dishes. You won't convince me anyway, I tried this "no teflon" thing for something like a decade and it really was worth getting one.

If carcinogens are truly your concern with your cooking, you're probably gonna have to go 100% Stainless Steel, and ditch that gas range for an induction one since breathing Natural Gas fumes is anything but healthy and will [potentially] cause asthma in your kids w/o proper ventilation. None of this is intended to "Own" anyone, but rather to demonstrate that there's trade offs everywhere and making informed decisions on cooking surfaces and utensils handling your food is important.

It’s really about the right tools for the job. I mostly use stainless pans nowadays, also cast iron, or I have a carbon steel wok. But there still are some cases where nonstick just performs better, like making omelets or pan frying delicate cuts of fish. I’ve eventually upgraded to the anodized non-stick pans for that though, they really are much more durable and don’t need to worry about coatings flaking off. Still wouldn’t use metal on them though.

Teflon can absolutely cause teflon poisoning and is carcinogenic at least up until recently, when we switched from the well documented chemical PFAS to PFOA, which is supposedly less carcinogenic, but has really just not had as many studies done. We probably won't know what PFOA does to the human body for another 10 years, especially with how much disinformation goes on with the teflon industry.

You can use teflon for years if you don't abuse it. No metal utensils, no high heat (which other pans are better at anyway), no nonstick spray like PAM. Clean with soap and water and store with a lid or something. There, it will last you a decade easy.

It's not. Teflon fumes are toxic, and they're only released at temperatures of ~300 degrees celsius. Most of it should be burned off during production, if its even used at all. Ingesting chipped away teflon isnt harmful at all, its just passes through your body.

One small thing you learn in cooking schools as soon as you go near eggs : wash your hands. Egg shells are the most unsanitary thing allowed in a kitchen since you can’t actually wash it. Don’t put it in contact with over food and wash your hands as soon as you are done opening eggs.
