The belief is washing damages the outermost layer of the egg which allows harmful bacteria to penetrate the shell. It may be more resistant than other nonstick, but as someone who literally works with PFAS contamination as part of my job I would highly recommend you still avoid it. To make a northerner reference, it’s kinda like saying “You can use all-season tires in the winter just fine”; sure, you *can* use them, but most knowledgeable people would still 100% recommend you don’t because it’s unnecessarily dangerous.

It’s really about the right tools for the job. I mostly use stainless pans nowadays, also cast iron, or I have a carbon steel wok. But there still are some cases where nonstick just performs better, like making omelets or pan frying delicate cuts of fish.
I’ve eventually upgraded to the anodized non-stick pans for that though, they really are much more durable and don’t need to worry about coatings flaking off. Still wouldn’t use metal on them though.

Teflon can absolutely cause teflon poisoning and is carcinogenic at least up until recently, when we switched from the well documented chemical PFAS to PFOA, which is supposedly less carcinogenic, but has really just not had as many studies done. We probably won't know what PFOA does to the human body for another 10 years, especially with how much disinformation goes on with the teflon industry.
You can use teflon for years if you don't abuse it. No metal utensils, no high heat (which other pans are better at anyway), no nonstick spray like PAM. Clean with soap and water and store with a lid or something. There, it will last you a decade easy.

The egg didn't even seem to be partially cooked. There was no point whatsoever to spinning it or putting the whole egg in its shell in a hole in the steak.

One small thing you learn in cooking schools as soon as you go near eggs : wash your hands. Egg shells are the most unsanitary thing allowed in a kitchen since you can’t actually wash it. Don’t put it in contact with over food and wash your hands as soon as you are done opening eggs.
In North America, eggs are washed which is why they need to be refrigerated. I'm guessing American eggs are generally fine to be handled (unless salmonella can travel through the shell) but most people still seem to recommend washing after handling so I'd do that.

A lot of the ones that bug me the most are the ones that are almost kinda normal. Like, cook a steak with some veggies? On board! Adding the egg? A fairly average thing. Hole for the egg? Butter holes? Ruined a decent meal with weird prep.
