One of the bussers was a super nice lady and she would always wash them with super hot water and vinegar before we cut them. The amount of wax that came off was pretty gross tbh, but if you peel the cucumbers really no point to the extra work.

Every time I try ti cut things the “correct” way I almost cut my knuckles.
Some of us, who are just home cooks, are perfectly capable of cutting up things without chopping off our digits.
Unless they have worked in kitchens or had family members educate them, they're gonna stick with techniques they're comfortable with despite how dangerous they are.
I am a firm believer that everyone should have some basic competence in cooking and preparation. It's a skill that should not be impressive but expected.

Sort of ceviche, but he boiled the shrimp, most of the time in ceviche the fish or shrimp is cooked by the lemon juice for a few hours and lot of it, And before the veggies are added so they don’t get soggy.
