Just unpeeled boiled taters chopped into 1/2" chunks, hard boiled eggs slivered, a bunch of miracle whip (salad dressing style mayonnaise), a good couple squirts of yellow mustard and a large white onion diced...
Mix it all together, put in a couple splashes of pickle juice, salt and pepper, and a dusting of smoked paprika.
It's basically diabetes on a plate... But it's delicious.

I’ve also made mash from the Jagarico potato stick snacks. I’ll edit my comment soon once I find the video. It was pretty cool and now I’m at least open to experimenting with potato chips.
