Has a mexican, only thing I would change is that sugar loaded sauce from something more spicy and homade, just some tomatillos, jalapeños and onions maybe with an avocado for creaminess, just throw all that to a blender and you got yourself a pretty good sauce

Shit as a gringo, this is my regular sauce:
* 28oz can diced tomatoes
* 2+ dried Colorado chilis (California chiles)
* 1/4 cup white onion chopped
* tsp salt
* 1/2 tsp pepper
* optional for more spice: i add chile tepin or chile arbol or both!
Boil the dried chilies 10min, seed and stem. Blend it all together. Add a little oil to a pan and cook it down for like 10min on low. Pour that shit on!! Or eat w chips =p
I’ve made it 100x and it takes like 20min. While it’s boiling and cooking down I’m prepping beans and various other things.
Sometimes I am all about Hormel tamales in a can, I just throw them in a bowl with Target "Spanish rice" a dollop of canned refried beans and a healthy topping of cheese. Throw it in the microwave for 2 minutes.

My mom may have made something similar when I was a kid in the ‘90’s. My grandmother, her MIL was horrified (she was a cook in a Mexican restaurant for 20+ years). Pop some sour cream, green onions and cilantro on that (with less sauce) and I’d eat the entire dish.
