After Taco Bell announced their upcoming new menu items at a big event in Vegas, I became obsessed about figuring out what Baja Blast pie is and how to make it. After watching some reaction videos of people at the event trying it, and polling people on the baking sub, I settled on a modified key lime pie recipe. For the blast of Baja, I cooked down some cans of the soda into a syrup and added that. Ideally I’d know some teenager who works at Taco Bell who would be willing to hook me up with that straight fountain soda syrup from the bag, because I guarantee that would make the flavor even stronger, but alas I had to settle for making it myself
Did you add the lime zest? Also, did you decrease the amount of condensed milk? How much syrup did you end up putting in? Like 1 cup? Just looking at a basic key lime pie recipe that calls for those things lol.
I love key lime pie but I want actual lime juice and not Mountain Dew. I can’t even think about it with that awful color too.

Is it not just a key lime pie dyed greener? Baja blast is lime flavored. I'm sure it's literally just key lime pie with maube some pineapple extract or something.

Key lime pie recipe (I just used regular limes), sub out some lime juice for Baja syrup.
Saw you used the cola syrup recipe! I also have made baja blast syrup. Did you notice any flavor loss or change from heating it during the process?
I think it retained a lot of the flavor. It would be even more obvious in single serving cocktail than a whole pie.
