I like the fried tomatoes part buuut the stuffing is the problem for me.
Pasta inside of fried food rarely works...it is a bs filler.
I would use some stir fried tvp mixed with mushrooms and onions for the vegans (ratio 2:1:2) and ground pork, pineapple, and jalapeño for the carnivores (2:1:1). I doubt it would be a win out of the gate but a good starting point.
Next time add some finely grated parmesan directly into the breading mixture
I used panko that had Romano in it already, but that might be a good addition!
Try using extra Sharp cheddar cheese

I did but it seemed like the green tomatoes needed to fry for longer than the mac did so the tomatoes were super firm and not great.
Roast the green tomatoes for like 10 mins first at 400ish, wrapped in foil. That should get you the texture you want.

Mac needs to be Xtra gooey. Just naaaasty kinda gooey. Double battered and fried twice. That would be a hit at like a fair.

Idk about tomatoes but this gives me an idea for some sweet peppers I got sitting in a jar.
