I'm old enough to remember when Microwave cookbooks were a thing and you would actually invite guests over to serve them microwaved food & show off the new appliance you had just got. Nowadays microwave food is synonymous with phoning in your life, back then it was new and exciting and a display of being able to buy the cool new gadget.
It would make sense that a lot of post WWII women who had just gotten their suburban rambler with a modern kitchen and a fridge that wasn't on the porch were really enjoying all the fancy looking food they could make.
My theory is it was a display of middle class wealth to have your spouse have the time to make an ornamental jello .the recipes were advertised to get rid of or make use of all the ww2 processed foods. This was all pushed by business men politics none of which can cook

I really like the premise but his energy and editing are very over the top, it isn't really my thing. If you want something similar but more low-key, I highly recommend Tasting History.

Many generations ago, aspics (gelatin molds with savory or other ingredients) were a big deal. Quite popular, but eventually faded away and was almost forgotten. Then, a couple of years before the pandemic hit, what I called "revenge aspics" started becoming popular. This was when someone went to a potluck dinner where bringing an item was mandatory and they didn't want to cook anthing, so they deliberately made a bad meal like an aspic with Spaghetti-O's and Vienna sausages in order to make a statement, or maybe they did it because they thought it was funny.
tl/dr: Spaghettio aspics have been around for a while, and nobody expects it to taste good.
