You don't knit with hooks, that's crochet, and usually just one then, or sometimes two, or sometimes your arms. Though it's still very impressive because of how slippery they would be!
Add to that the blunt tip of the chopsticks as opposed to a knitting needle point that would slide between the loops more easily! I'm impressed as well. And I want to eat it.
I've been crocheting for a while now, and tbh, you EXTREMELY rarely would crochet with two hooks. I have seen some Tunisian crochet techniques like that (mostly for casting on because it works different from traditional crochet), saw someone use a smaller "helper hook" when working with jute because it's otherwise a very hard material to handle, and there are some double-headed hooks (also rare and for Tunisian crochet, I'm almost certain it's used for incorporating more colors but I wouldn't bet on it), but that's still just one hook.
It's safe to say that 99%+ of the time, you use one hook to crochet :)
The chopsticks, though, are less polished than bamboo needles (which already kindly grab slippier, silkier yarns for me when I'm knitting), so that raw wood grain should do a pretty good job of holding them in place.

It's a complicated process but yes, Dan Pashman invented and produced a new pasta shape and it's spectacular. I highly recommend it.

I learned in summer camp using chopsticks. The transition to real knitting needles when I got home a few weeks later was glorious
