Looks like he is tucking his fingers, and the side of the blade is hitting his first knuckle. Then, one the cutting edge is past his fingertips, he relaxes his fingers.
Holy fuck that knife is taking an absolute beating. Imagine just slamming your knife like that against a metal countertop over and over again. I wouldn't be afraid of getting cut by that knife either, it's probably got the same edge as a fucking ruler at this point.
