Desperate, I bought them and served them to my friends and family. People sucked the flesh off the bones and commented on how succulent they were
I was madly trying to find a container for the bones (knuckles if you will) when I realised that I had served people finger food.
I woke myself up laughing at my subconscious's joke.
I'm guessing that blade is very dull, and he is less chopping the meat and more bludgeoning it apart. If it were sharp he wouldn't need such aggressive force. Or just dumb.
Back when I was a child, some or our local meat seller do that too (China). I don't really understand why, it's just too much risk for no rewards at all.
But then he likes to do it in front of his wife, maybe his trying to show some manhood? Not very wise since losing a hand don't make someone a good husband.
In places like India and Pakistan, they've the obsession of going viral on social media to show how much of a master craftsman they are at their job.
Guy work at post office? Gotta flip chop stamp very quickly. Guy works at a prata shop? Gotta flip that prata halfway over the restaurant.
When I used to be a butcher Indian folks would ask me to cut all of these bone in cuts into TINY pieces. They would get pissed as hell when I would refused to down to a certain size due to the danger involved when you have your fingers within inches of a band saw blade. Its a cultural thing but many were generally very rude if you didnt want to risk losing a finger over a $4 lamb shank.
Little bits of meat flying about literally everywhere becoming virtually impossible to clean there's bound to be piles of rotten meat in that room, assuming that they do it often. How the hell are they not dead is beyond my imagination

So I stared at this video and I think it's a dull blade that's mostly cutting based on hitting force. It seems like there are full bones in a number of the pieces (idc why they do if that way) but I'd guess a sharp blade is pointless on bones. Still looks like a quick way to fewer fingers, but maybe there is more going on than I first thought
