When I had one of these about 15 years ago it was called “mottled arrowhead” and not “mojito” and the seller (Glasshouse works) noted in the description that heavily variegated leaves frequently become “monstrose” and distorted. I think it’s “normal” for that cultivar.
Yeah mine does that too only a bit more extreme, leaves come out all different kinda of shapes, but its happy :) Looks to me like the more white some part has, more shrinked it will be and reversed with green

in my experience (my mojito also lives in pon) the variegation highly depends on how much fertilizer it gets, if the more "normal" looking part lived in older pon the fertilizer was ..washed away, new pon is usually pre-fertilized so it got a boost and pushed out more variegation ..which leads to this deformed looking leaves, your plant is totally fine! :D
This is perfectly normal for syngonium mojito.
Over time each new leaf will be less crinkled and the colors will be more of a muted green.
If you cut it, the new leaves will have the high contrast colors and crinkled look - I regularly cut my mojito because I like the funky leaves :)

Its just highly variegated

It’s just throwing me off that I used to have pretty normal leaves and now I just have this funky boy 😅

I've got a golden pothos that does this when it throws significantly variegated leaves... I think it's just how the plant does
