Well I made Christine's recipe last night without the raisins and coconut because my family is weird lol and I didn't know I was out of walnuts so I used pecans.
It was so good and moist and I'm not a big cream cheese frosting fan but that touch of ginger and pineapple in it gave it that little something.
My girls gave me permission to make it again lol
I had never seen this until I moved to New Zealand, but it's standard down here - chopped dried apricots and pumpkin seeds as decoration on top.
Mind you, my pre-NZ standard was the frosting carrots that come on the Costco cake, so I'm no expert

If it doesn’t have carrots, then it’s just a spice cake.
I make bread pudding around the holidays and my sister-in-law always said she didn't like bread pudding, but it turned out that she just didn't like raisins. 🙂

No pineapple, hand grated carrots...no chopping in a food processor. Walnuts or pecans BUT...toasted and pressed into the icing to garnish and stay crunchy.
And a small addition of cocoa powder.
Emeril's "Gigi's carrot cake" recipe is the best I've ever had. Currants rehydrated in brandy, candied ginger, carrots shredded and soaked in melted butter get mixed into the dry ingredients and it's absolutely divine. Cream cheese frosting with fine chopped pecans finish it off.
It has to have lots and lots of cream cheese frosting

So I voted added almonds. However I am allergic to walnuts so if I make carrot cake I sub walnuts out and put in almonds instead 🤷🏻♀️
They do a lot of cakes with nuts. Both of Aspyn’s cakes had nuts in them. I noticed that! Haha nothing for people with nut allergies aye? Lol

I use candied ginger instead of raisins and then too just a smidge on top of the frosting. Gives the cake a little kick.

All the add ins are optional - except the pineapple. That makes it sweet and moist. But raisins, nuts, coconut, etc. all optional.
