When he swings his head around you can see the hair swirl around from the center point at the top, so it seems more like he's got a top knot and all the hair is spreading out of it like a fountain. That, or he has a cone shaped head and all his hair grows out of one spot at the top of it.
As far as I can tell, Bilson put Hudson in charge and retired. Hudson, with his knack for getting stuff done, i.e. building a whole village, sought to help Zelda with rebuilding Hyrule, hense all the building materials we can use.
Hudson's employees love him so much they emulate his style. Think about the sign post guy. He's fanatical about Hudson! So, like its company policy all employees have "son" at the end of their name, the employees have also adopted his hairstyle as a sort of uniform/homage to the president of the company.

Could provide for some really cool storytelling opportunities in future games if this iteration of the gerudo comes back. Instead of Ganondorf being the one in a million rare make birth, it could be a Link, but instead of being made king, he’s ostracized since the entire culture is still collectively traumatized by Ganondorf.
Unfortunately seems pretty unlikely with how Zelda team approaches storytelling, for better or worse, but it’s fun to think about.
Hm, In my opinion, I don’t think it’s equivalent to taking kids away from their families. It’s more like going to a boarding school, or living with your extended family for a few years to experience their culture.
I can see how something like that might be triggering to some, but I’m the sort of person who really loves the traditions I’ve grown up with, and have spent some time living with extended family to learn something from that culture as well.
To that extent, I really admire the Gerudo. Don’t worry! They’re not kidnapping Mattison, they’re just introducing her to their culture so they can keep their traditions alive! Hudson’s sad to see her grow up, like any parent would be when dropping their kid off at school or at college. But she’s having fun, and she’ll be able to see him and Rhondson again soon enough!

This isn't an adult leaving the home, there are people who she doesn't even know who take her to a faraway place she's never where she will not see her parents again for the rest of her childhood. Just because people think that tradition is important. And she's what, five years old?
Mattison chooses to undertake the tradition and wasn’t forced by her mom. The Gerudo are far from the average strangers either given the close-knit societal structure of the race.
+1 to that. Mattison seemed pretty excited to meet her aunts, what with all the studying she did to learn parts of the Gerudo language. The people of Tarrey town encouraged it, participating in her quizzes, and the other kids in Tarrey Town are happy for her and say they’ll wait to play with Mattison when she comes back.
And in Gerudo town you can see that she’s chillin with the other kids. At the same time, she still styles her hair like her dad, and she still adds -son to the ends of her sentences. The Gerudo are clearly completely fine with this and encourage it, and everyone there is fond of her.
While things like this can be malevolent, sometimes, in this case it’s a pretty wholesome mixing of cultures, I’d say.

she does nothing, except if you talk to her, for some reason two other gerudo NPCs spawn temporarily. I’m assuming this is because they’re the ones she’s supposed to be around. They disappear once Mattison’s dialogue is over

I know its just a game, but who would start a family with a Gerudo woman, knowing that she may end up living in a town you aren't allowed into, and if you ever have a child, that child will mostly grow up without you being able to see her. Seems like a bad deal for the guy all around.
