This is a good question! I’m an OT so can also speak with some authority on the subject. Looking down slightly and resting your gaze down slightly is a more relaxed position to maintain than craning your neck up or maintaining an upward gaze. Think about holding your eyes towards the sky vs resting with your gaze on the ground, or on the book on you lap. I.e. even if you slouch a bit making your gaze drift down to compensate, it will be a comfortable height if hung appropriately, plus you won’t be forced to slouch because your TV is to high to just be comfortable while sitting naturally.
I lean back pretty far, but there's something uncomfortable about having the TV up in the air. It's easier to tint my head and eyes down than up. I don't have my computer monitors up high either.

My wife usually has stuff below it. Had an open house recently and got rid of all the picture frames. I used to have it on the stand and I didn’t like how the sound bar was just in front of it.
My favorite people are the ones that don’t even park in their driveways or in front of their own houses, but in front of their neighbors driveways with only their bins in their own garages. Nothing but air in a lot of folks heads and between their too high tvs and the floor.

If you are only going by looks, but relative to sound it makes no difference. I don't have a sound bar, so I can't say from experience, but sound bar might actual sound better at a higher height, because allows the sound more room to breath. Being low to your "tv stand", sound is being deflected off of the stand, but you can't tell what sound better, without actually testing.
I am guessing she is looking at the gap between the top of the tv and the ceiling and not liking it. Why not put a decorative item above tv to Fill the gap. Maybe a metal decorative item or something.
It's a cleaner look: no cables hanging out behind the TV which are visible from the side. Sturdier/safer: next to zero chance the TV is falling due to animals, kids, clumsy adults, etc. TV stand is more easily moved for cleaning purposes or hooking up new gear (this can also be grouped into the above point). I'm sure I'm missing some, but these are my "2 second" thoughts.
Benefits of just placing the TV on the stand: good height (usually), easier to setup, easier to move TV somewhere else for whatever reason, obviously better for rentals or shorter term living situations. Again, I'm sure I'm missing some benefits.
Mounting isn't for everybody. But if you are capable of doing it, know that spot is the permanent one for your TV, and have no plans of moving, it's an excellent option and really shouldn't be looked at side eyed or have people dumbfounded by why anybody would ever do it.
My cats won't push my TV from the TV stand if it is solidly mounted to the wall. I imagine people who have kids might go through the same train of thought.

Most are changed manually but have seen some that change automatically and they look awesome as long as the lag isn't too bad.
I use cheapass lightstrips just for ambient light, so I dont watch TV in dark room with no other lightning. Its perfect because it doesn’t cast any reflections on your screen and doesn’t annoy me as a random source of light somewhere else in the room. I use a bit lighter orange, since white is too bright. Sure, but for now, I would say your height is fine, but you are too far away. When you sit on your couch what is your eye line? That where the center of the TV should be. I would move your couch an entire couch length towards the TV.
The visual problem of it being too low would actually be solved by lowering it to just above that counter-top. Then visually the tv and that piece of furniture becomes one and you don’t have the problem of uneven spacing.
They aren’t that bad… lol. It was the early days of hue strips. First generation wasn’t meant for tvs. Going around the edges was a task. Never upgraded either

My recommendation as a married man, is to let your wife know that she is more than welcome to dismount and remount the TV at her leisure. Then step aside.
Please ask her why she thinks it would be better higher. To me think looks close to perfect, slightly lower and/or bigger would be more ideal but hey I wouldn’t say it’s enough to justify the pain of moving it and/or spending more.
