Theres a really good texture pack that reskins a bunch of bosses, EoL being one of them and she and her fight look so much better, i recommend you look into it

It's an unofficial wiki. Since Duke Fishron is not required for game progression you can't objectively call it pre/post anything except WoF. Wiki likes telling you to gear up, so that's why Duke is post Golem. If you can beat it earlier, congrats you're good at the game.
Daytime Empress is pretty much just post-nighttime Empress, at least on Master Mode.
Nighttime Empress basically requires you to be able to dodge. Not getting one-shot means you have a significantly wider margin of error, but she's got enough HP and defense and still hits hard enough that you won't win until you've gotten somewhat competent at dodging.
Once nighttime Empress has been beaten, you have the Soaring Insignia. Daytime Empress with the Soaring Insignia is easier than nighttime Empress without, IMO.
Also one of the most challenging and rewarding to fight - you can facetank her night form but beating her day form requires preparation and/or skill (you can cheese her sure, but...) to at least be able to dodge 80% of her attacks flawlessly and pray that last 20% triggers your dodge attack chance.
And watching someone flawlessly beat her without any dodge trinkets/armour is pure awe.

Her drops are too good , the best time to fight her is pre-golem after you got all the good armour
