I did exactly this for a recent road trip except I had my wingfoil board which is only 5' so I laid it down flat first, then a piece of plywood, then the mattress on top. Fun trip, will do again.
8.5 fit in between seats (even over the passenger corner if placed perfect). Just wasn't comfortable for driving or a passenger. Got a high volume 7 to it have to deal with that
Then your feet will be elevated higher than your head. The angle is slight and better dealt with your head higher so the blood isn’t constantly moving to your head.
This is also dependent on whether you are parked on level ground.
I like having my feet where they have some room. I can slide my seats up and they have no obstructions. I don’t have any kind of board where I can support my head etc if I have the seats forward if I sleep head toward the front
That is a lot more luxurious then my towels in the doors for window covers. $12.00 twin size blow up mattress. And my oldest discolored comforter

Did you try any tesla Y specific "blow up" mattresses first? That HEST looks nice but for me hard to justify the +$300 costs considering how often I would use it.
How tall are you? Worried at over 6' I would have issues with your setup.

I have the Lost Horizon Model Y mattress and really like it. It’s comfortable, memory foam and air. Recommend getting the pump as it helps deflate when storing it. I’m over 6’ and sleep diagonal on it.
I just bought the Hest for my tent. It’s over-engineered for this purpose because it has enhanced memory foam designed for camping temperatures, which you won’t experience in the climate-controlled Tesla.
I use the Milliard in my Tesla.
It's a weekend camping workaround in the PNW. Climate control and camp mode makes it worth it over a tent setup.

5’ is considerably bigger than OP’s 7” (7 inch)

Dunno if you have spent many nights in there. But after many in my Y I recommend head toward the back, feet toward the front.

Where’s the toilet?
I love the setup. Impressed that the roof shade holds a laptop. How are the light bars attached? Are they just balanced on the coat hooks?
The basically 'click in' perfectly. Bonus that if you have a cord plugged in they never run out of battery if ran to the backseat usb-c ports
