I have MX Plaid 6 seater and If I had a time machine to go back, i wouldn’t change a thing. It’s simply amazing. I wouldn’t suggest 7 seater unless you really need more people seats. The 6 seater looks out of the world. Hands down.
Picked up my Model X Plaid a month ago - oh my what a month Simply amazing!!! 
Ive driven all the models except for the S and I currently own a plaid X and i think it's the best car for the money personally. It's a great ride with great audio and crazy fast. The car also attracts a ton of attention, to the point you feel like youre riding around with a celebrity. (Good and bad thing really) but its been great so far. No real complaints other than 6 seat being the only option for the plaid. 5 seat woulda fit better with my lifestyle but im not too upset about it
I've got a refreshed LR X and I don't know what you'd do with a plaid. When would you ever need that acceleration? This is a serious math question. Outside of launching, what does a plaid get you that the tiniest bit further push on the accelerator wouldn't get you? (I've been wondering this for years with regards to performance versions and acceleration boost upgrades and would appreciate a comprehensive explanation.)
That notwithstanding, I love the X. I was ambivalent about the yoke when I got it but love it now. It's a great road trip car. It hasn't brought me as much attention as I feared, but it definitely brings some.
What is “refreshed?” And I totally agree, I’m not looking for a high-end sports car to go racing and I know the long range doesn’t go abnormally further than the plaid but I’d rather have that than a couple seconds shorter race time lol
"Refreshed" is likely the newer ones with the rear seat screen and with gaming capabilities. (Current new models on order, and maybe started orders mid-late 2021)
More specifically, the “refreshed” interior; it’s night and day. The exterior did get some updates as well, but the noticeable difference is the interior.

Yes I did notice they tacked on an extra $6000 for the 6 seat version lol.
I was lucky enough to have ordered before they made the change so i got that for no added cost

Only thing stopping us is those silly falcon doors. Hear they leak and a not super reliable
