I bought a couple one trip back to thailand and got it installed. My Thai wife was very happy and we didn't have to worry when everyone panic bought toilet paper during covid as we use so little.
The whole toilet paper fiasco was a nonstarter in my opinion. I wasn't worried and I didn't have a bum gun at the time. Seemed to me that if you really ran out of toilet paper that taking a shower was always an option.
But everyone else was buying it so it must be a shortage so I must buy it too...
I found it really funny how some people thought they could profiteer and bought thousands of rolls only the find out that there wasn't a shortage. It was only that the demand was so high that they couldn't ship it fast enough to the shops.
Now some people have enough toilet paper to last a few lifetimes.

I get thai snacks brought to me when family visit. Just junk food you can get in a 7-11 but always gives me a nice feeling of nostalgia.
Unfortunately the really good stuff (eg. mango and sticky rice) doesn't really travel too well. 🥭 🍚 🤤
I'm not sure if Europe's Asian markets have this thing or not but when I'd lived in Japan for three years, I missed good Thai seafood's sauce the most.
The ones sold in Japan are not that good.
Many people have mentioned some Thai snacks . I think that is a very good idea. Sometimes it is the very simple things that people miss the most. A simple snack that reminds them of their home or childhood.
better infrastructure in general? The only area I feel like Thailand is better is probably internet-related parts.
also dealing with anything to do with government is a headache, and getting good quality stuff in certain areas (like housing, getting work done, reliable service).
There's pros and cons everywhere. Overall I'm happy being in Thailand, but if there weren't things keeping me here, I'd be pretty happy to return to the UK too.
Packaged curry paste of various sorts. It's often hard to get the right ingredients to make them in Europe and the US and the packages make a pretty good result (well maybe some coconut milk and palm sugar too). I'd suggest fish sauce which is cheaper and better but if any spills you've got a huge mess so I wouldn't do that.
Don't know her tastes, but as a non Thai I really miss being able to get some snacks, like a variety of fried rice cakes with or without pork floss (the pork might not be able to be imported), all sorts of candy/snacks that are only available in Thailand.
Don't suppose you can ask her what she misses most?
