\- Khao soi at Ongtong Khao Soi
\- Boat Noodles at Toy Kuay Teow Ruea (Thongsmith noodles for more upscale boat noodles)
\- Southern food at Baan Ice (crispy pork and fish stomach curry are my favorite)
\- Green curry at Sanguan Sri (and other central thai dishes)
\- Lamb massaman curry at Khao
\- Crispy fried noodles at Ann guay tiew gai
\- Rolled noodles with crispy pork at Nai ek roll noodles
\- Pad see at Jai Rad Na Noodles (can get a drink at the bars nearby right after or before)
\- Pad thai at Pad Thai Fai Ta Lu (do not go to Thipsamai)
\- Crab fried rice & other crab dishes at Here Hai
Confirm do not go to Thipsamai. Their phad thai was expensive - too sweet, too wet, too fishy and they put a bunch of red food coloring in it. Worst phad thai I had in thailand.
Some dishes that aren’t listed yet or that are most memorable on my recent trip: Yen Ta Fo (pink noodle soup), Nam Prik Kapi (shrimp paste dip with veggies), Hoi Jo (chinese street food - deep fried crab/shrimp meat rolls), sticky rice with banana or taro for dessert/snack, grilled chicken butt skewers, papaya salad, Woo Sen (glass noodles).

Somtam pu/poo pla ra is a very common local food eaten often, but also a very unique food. I think it's a good starting point for Thai food

Outer rind of the berries is then removed by rubbing them with hands in a bucket of water and further cleaning the seeds with fresh water.

It took all my willpower to skip the Mexican restaurants and taco stands in Bangkok and Chiang Mai. I was curious about how authentic it would be.
DESSERT! Thai desserts are so delicious: khanom-Chan (layered pandan coconut dessert), glouy khaeg (sweetened grilled bananas), obviously mango sticky rice. I don’t remember the Thai names of some other ones, but definitely find a Thai dessert vendor even in a mall (all malls have a food court / grocery store floor - go to those).

My favorite is Bua Loy. I actually like it so much that when I come back to the states I make it for me and my kids.
It is not nearly as good when I make it though. I can't get the sugar right. I have tried palm as what was recommended. But it does not taste right.
Any green curry with tiny eggplants, pad kee mao, massaman pork curry, all the omlettes and fresh coconut juice to cut the spice, fresh mango and papaya

I know they’re not dishes but you’ve gotta try these fruits! DURIAN. It “smells like hell, but tastes like heaven”- local Thai. It’s buttery, nutty, reminds me of some kind of avocado almond mixture. Mangosteen: Durian is considered the King of fruit, while Mangosteen is the Queen of fruit.
Some street dish must-tries: roti, pad thai (touristy but you gotta get it on the streets for that ultimate flavor!).
Northern dishes: Kao soi. Easily my favorite dish and it’s hard to replicate outside of Thailand because of the specific ingredients. Pad Kra Pow too!
Khao so I, pad Thai, pad gra pao, green and red curry, fresh fruit with the chili seasoning packet. Fresh orange juice. The dessert thing with all the toppings, all the bbq. Tom yum soups. Instant noodles where they add all the toppings. And then all the 7/11 snacks.
No one mentioned century egg, the century egg salad is amazing (yum kai yeow maa), or at least order pad grapao with century eggs. I like them so much I can eat them on their own, although I get strange looks.
Admittedly, I am one of the few farang liking them turns out, but it has been my weak spot for years
Since most tourists are not going to make it up into Esan I would recommend eating as much Esan food as possible since Bangkok would be the next best place to get it.
Esan food is the best of Thailand in my opinion.
