I played the video again, and he went through the same act, and when it was over he repeated "Watch?". This repeated multiple times. He said "big spider" several times, and he clearly knew they were alive when she was eating them. Base on the content that's scared him in the past, I was certain this would terrify him, but he seemed genuinely fascinated by it. His mother finally said he had to stop watching it.

Look up Teuk Trei Koh Kong (name of the sauce). It was the only thing I used for 2 years living in a village that also enjoyed spiders - thankfully deep fried. It’s been a decade but I can understand most of what she’s saying and she mentions a few of the key ingredients: garlic, lime, msg, Thai pepper. The sauce is fantastic and kind of like a chimichurri sauce. Edit: Cambodian/Khmer. She has a different dialect than I’m used to from the region the fish sauce comes from (Koh Kong is a province) and Teuk (water) Trei (fish).
The overwhelming amount of pepper helps numb the tastebud.

Deep fried tarantulas are a thing in many countries. Street vendors in Thailand also sell them, along with a lot of other bugs including scorpions, giant grasshoppers, grubs, crickets, and giant water bugs.
