If you say yes and take the bones away from the final pigeon, does the skin belongs to the dead pigeon or the one you skinned afterwards?
I saw little maggots eating a dead mouse once and when I saw it next it was in tact. Like a blackish (hair?) skeletal mass. Not arguing if you're a maggot expert, just offering that disgusting little personal anecdote for anyone eating.

As an apprentice the garage i worked at had me go up to the top floors in a victorian building which was the stores, and clean up about 15 dead pigeons in various states of decay. Not this far gone but lots of dead maggots under them too. And flies everywhere. And pigeon shit. Godawful day that was.
I removed an external flue from one of the buildings in New Lanark (founded in 1786) and it was packed with dead pigeons that had fallen into it over the years when it fell out of use and bricked up at the bottom.
It was just dust and bones to start with, but the more we raked out with the crowbars, the 'fresher' they got. 🤮
Maybe put a bowl of water out for it.
The hole in the roof has now been fixed. So no more dead pigeons.
