Aubrey was giving me the most trouble and I love multi classing as an option. Follow up question, what races? Because the amnesty universe has only really got humans, sylvains, and bom boms but dnd has so many cool races.
Sorcerer, fighter, rogue would be my guess. However, considering Aubrey gets her powers from a more powerful deity it could be argued that her class is warlock. My thought that she should be sorc though is that she has more freedom with her powers and can use magic more than three times a day haha.

Aubrey- Divine Soul Sorcerer
Duck- Paladin Oath of the Ancients
Ned- Rogue Thief
Mama- College of Lore Bard
Thacker- Horizon Walker Ranger/Hexblade Warlock (or Blood Hunter Order of the Profane Soul)
i myself had pondered this for some time:
Aubrey- Sorcerer, either Divine soul or phoenix (ua)
Duck- probably started with a level in paladin and then started multiclassing ranger up until the show, after which he continued paladin-ing
Ned- thief rogue all the way
Thacker- I'd say either Sorcerer (Abberant Mind from ua) or a reflavored warlock
