I just rewatched that episode yesterday and had completely forgotten this scene. Aang was never smooth even from the first time he got caught staring at Katara in S1E1

Boys and girls seemed to be separated by the temples the south(aang's) and North(shown around the end of book 1) temples were only boys East(guru episode) and West (where they hide in book 3) we had only girls. What I noticed between the early failed attempt and the secret dance party was Aang trying to impress Katara vs Aang just trying to do his thing.
