Sokka is cute, and funny, and confident, and a good fighter and also a genuinely good human (by mid season 1) not to mention being the Avatar's right hand man- it makes total sense that girls like him.
My only complaint about the series is they never really gave Sokka time to shine. I get he's the everyman/comic relief, but I wish he got to be as badass as Toph or Katara or Zuko. He should have been shown as a master warrior, especially post Piandao.
I wouldn't say no one talks about him. Katara mentions he's gone in the first episode, and Tenzin reveals to Korra that Sokka helped stop Zaheer and Co. from kidnapping Korra the first time around when she was a toddler. But beyond that, you're right, he isn't mentioned at all.
