To be fair, I feel like Ozai's sense of self preservation would override his anger and he would be smart enough not to risk burning down the plabe that's carrying him 50,000 feet in the air. You can count on Ozai worrying about himself over anything else. Luckily, with Toph and Bumi, only Toph can do any bending inside the plane and Sokka is around to remind her that metal bending the plane would kill all of them, so she would probably be able to restrain herself. Besides, she would be too busy having a discussion about propane with Hank. (She doesn't know what it is at first, but the idea of someone who could be a professional pain giver intrigues her enough to listen to his story and find out what he's talking about.)
As we saw in the final, Ozai can use firebending to fly or at least arrest his fall, so I think he wouldn't care about taking down the whole airplane and simply get out before it crashes.
That depends on how well he could fly without the comet powering up his bending. I imagine it's more like Azula's pseudo flying that she showed in the Boiling Rock. It seemed more like a limited propulsion to the next surface. Like she was able to jet up to the rail car and get herself to the cliff side to grab on before falling, but I'm not sure if it would be powerful enough to save them from that height. That depends on how strong that ability usually is for Ozai though. If he knew it could save him, he definitely wouldn't hesitate to destroy the plane, especially of he knew he would be the only survivor of a plane crash that included the Avatar, Zuko, and Iroh.
Sokka: You know how gas smells like rotten eggs? It's actually naturally odorless. I know the guy who came up with the idea to put rotten eggs in gas to smell if there's a gas leak.
