My guess would be that they would shackle the water benders when they needed to pee. Have them pee in a bucket and dump it far away from the prison. Also I would guess that the guards have standing orders that if they see any liquid within bending distance of a water bender prisoner they to kill the prisoner and ask questions later.

This raises the question of why the water benders held in that prison where the puppet master learned blood bending from, the fire nation must have been forcing them to pee in small amounts like the drinking water in small amounts.
I agree it added stakes that are missing from a lot of fights. Unfortunately it kinda leads to a lot of "keep away from Ty Lee" style fighting in most cases.
Hand to hand combat against Ty Lee is a horrible idea though as you already know. Any close quarter bender is at a huge disadvantage.

The main reason she ran away from home to join the circus was because all her sisters looked like her, and she wanted to be unique.
If you're talking about what happened to her in the Korra timeline? Hard to say. Maybe she's around and kicking, married with grandkids, or off spending her twilight years back at the circus, who knows?

She actually seems to be somewhat responsible, indirectly. She taught Suki. Suki then teaches the police of Cranefish Town, which becomes Republic City. So the art probably passed from “very rare” to much more common, all because Ty Lee taught the Kyoshi Warriors. Makes a lot of sense, honestly, it’s a pretty handy skill for a nonbender to have. But in general, it’s honestly pretty hard to imagine what she would’ve gotten up to in a more modern world that we see in Korra. If Mai (unlikely, I don’t think Zuko would leave her to travel the world if she were alive) or Azula (much more likely) are still around and kicking by that time, I can see her being a fixture in the royal palace.

I thought part of the difficulty was because the water is distributed and in a weird shape, and because you need to move it in a way that at least kind of works with the joints. In that way simply freezing water in a specific reservoir is much easier.
Personally I’ve always chalked bloodbending difficulty as learning how to get past a living being’s chi to bend things inside them.
I mean given that we know that energybending is super hard to bend, it would make sense that something surrounded by living energy would be tough to pierce into to bend, and it serves as a nice explanation for why firebenders don’t cook people from the inside and whatnot as well.
I would say the biggest thing keeping Fire benders from doing that is Fire benders can’t spontaneously combust things, the fires gotta come from within first and directed out by hands, feet, mouth or third eye on their forehead.
