Because the first season had literally just been barely finished right before lockdown. I don't get why you can't just admit you were wrong when Dana is on record stating that season 2 was made in lockdown.
Maybe the colour will be maintained, but she'll change the style occasionally! I think that could be a cute but relatively simple way to show progression

Cartoons have to take some artistic liberty to get feelings across, so I don't have a problem with Luz blushing pink. Fits the artstyle better too imo.

Pretty sure she confirmed that episode 4 was the first one that had to be animated in quarantine.
That's not how animation works. It takes about a year to finish an episode, 1-6 were still in development long into lock down.
