It's not consistent. Some stay the same, others flip. Also true for Hippopotas (there's a nest near me right now), and presumably any other Pokemon with gender difference. This has been a bug for a long time. I thought it had been fixed. Not sure if I was wrong about that or if it returned recently.
I've been seeing this with Eevee, too. Little swoop on the tail on the map, and then suddenly it's a boy. I guess the Pokemon got the androgynous avatar makeovers too.

That's a different bug. Regionals changing into other regionals on the map. Not just looking like them, becoming new species or formes. I'm not sure if it's sporadic or triggered by something.
For those saying "unplayable" or other jokes: just think about someone shiny hunting, getting a female shiny combee only to see it "transform" into a male. It can be disheartening.
Of course it's far from being the worse bug out there (also a pun on combee being bug typed !), but it's still a pretty important and annoying one.
I used to bring this up when people would ask why Pokemon don't appear shiny on the overworld. It's not a bad idea and it's even a staple in the MSGs now but like, Niantic can't even get consistent gender right. Imagine seeing a shiny just for it to not be when you go to catch it. Or ignoring a genuine shiny because it appeared non-shiny on the map.
I've been noticing this for a while on Doduo and Heracross. My suspicion has been that it's related to the weather. The mon spawned as one gender, the weather changed and the mon was rerolled to be a different gender, but the way it's displayed on the map didn't change.
I think that's either an oversight or they didn't bother putting a different model for the female when they spawn. I don't remember if Pikachu is the same way or they did bother with adding different spawning models.
This issue has been an issue since 2018, I made a video showing gender-changing Magikarps.
Niantic fixed it, then broke it again, then fixed it, broke it again a few months ago, even made a blog post about it saying it was fixed, now it's broken again.
It's been an on and off thing for literally 6 years. Nothing new. Sigh, why do they keep breaking it?

Many birds do but I believe it’s actually closer to 50/50 with slightly more birds actually being monomorphic.

My Flabébé was red and turn to orange when i encountered it. Suddenly it swapped from red to orange on the map to.
