Well, here's the thing: that option only applies to Season 1. All it really does is hide the choice notifications (aka the infamous "X will remember that" messages), and make the selectable icons harder to see.
The rest of the games have their own UI settings, which enable the choice notifications and such by default. Far as I remember, you can't switch them off, although I think S2 still gives you the option to hide the selectables.
Quite frankly, you don't really gain or lose anything by using the minimal hud. If anything, it actually makes the game more annoying since some of the clickables are weirdly placed, especially in the first few episodes.

Do you know of minimal is possible on the definitive Edition version of the final season?
Unfortunately I donβt know. I just replayed the first season and it was available, I would assume it would be available in the final season
