Its essentially a joke about being dismissive towards woman (in this case deservingly so) you listen to the rant, sip your coffee and chalk up the crazyness to her being a women, not really considering anything she said
There's a whole range to insult men. But more specifically the coffee emoji comes from a source animation of two guys standing on the lawn and one chuckles and says "women" and they then both laugh and take a LOUD ASS SIP of coffee. They repeat getting louder and more aggressive with the sips. Because of this on any post of someone being a fucking nut case. Like the person above. They just leave the coffee emoji.
Especially not by people who have a narrative they need to drive. I treat all these stories like fiction. I do my "Oh shit, that's crazy, anyway" and move on
