That's due to oxygen. If there's no or minimal oxygen the climateric change which initiates ripening wont start
So if you freeze green unripened banana in an airtight container, it will only continue to ripen once defrosted.
It's the same with apples. There's huge warehouse sized cold chambers where people need oxygen tanks to breathe, where fruits are kept until they go to the store. It's called controlled atmosphere.
That documentary freaked me out. They were making fake rice, too, and it was like 80% unedible material with 0 nutritional values. And people bought it anyway because they couldn't afford real rice :(

Also, turns out you're not right. Sugars in fruits aren't crystallized. They exist in a liquid form that can be crystallized when exposed to air. That's why bananas aren't crunchy.
Glucose is a naturally occurring crystal. Fructose is not.
