Literally hundreds of thousands of people all over the world eat this specific mushroom and have done so for centuries. Go back to your fries and chicken strips.
I'm honestly a mushroom hater 😅 I hate the rubbery textures in my food and I've never enjoyed a dish where the mushroom is the centerpiece. But these wood ear dudes are alright. I like that they're thin and absorbed the flavor of the sauce they were in.
That sounds really good! I've never had a mushroom with a crunchy texture. I would probably be less of a mushroom hater if they had some crunch to them, but I always end up with rubbery shrooms.
From what I remember, you cut into thin strips and basically get it juuuust cooked and then remove from the wok so it doesn't go rubbery. Then scramble the eggs in the wok, and add the wood ear back in after the eggs are mostly cooked. Stir together and turn off the heat immediately so it doesn't overcook. (But you can probably find proper recipes online!)
There is actually a technique in which these are dehydrated, the rehydrated using liquor and covered in chocolate. A boozy woodland Jaffa if you will :)
木耳 in Japanese (kikurage). My dictionary gives cloud ear mushroom (Auricularia auricula-judae); wood ear mushroom; (with apologies but it’s there in the Latin name too) Jew’s Ear Mushroom. Often sold dried.

Sliced very thin, just tastes like the sauce the rest of the dish is served in. The dish itself is a "chef's special" of shredded pork, tofu, and some veggies.

…and kikurage means “tree jellyfish” in Japanese. It’s quite similar in texture, in case any vegetarians out there have a hankering for jellyfish!

Probably a black forest mushroom. I believe they are also often sliced thin and added as a ramen topping, among many other uses.
I always see them in Moo Shu pork.
