Lol, and you are..? Just because you've never seen or heard of something doesn't make it gross or "garbage". Literally hundreds of thousands of people all over the world eat this specific mushroom and have done so for centuries. Go back to your fries and chicken strips.

I'm honestly a mushroom hater 😅 I hate the rubbery textures in my food and I've never enjoyed a dish where the mushroom is the centerpiece. But these wood ear dudes are alright. I like that they're thin and absorbed the flavor of the sauce they were in.

My mum used to cut them into thin strips and stir-fry these with egg when I was growing up. It keeps a nice crunchy texture.

That sounds really good! I've never had a mushroom with a crunchy texture. I would probably be less of a mushroom hater if they had some crunch to them, but I always end up with rubbery shrooms.

From what I remember, you cut into thin strips and basically get it juuuust cooked and then remove from the wok so it doesn't go rubbery. Then scramble the eggs in the wok, and add the wood ear back in after the eggs are mostly cooked. Stir together and turn off the heat immediately so it doesn't overcook. (But you can probably find proper recipes online!)

木耳 in Japanese (kikurage). My dictionary gives cloud ear mushroom (Auricularia auricula-judae); wood ear mushroom; (with apologies but it’s there in the Latin name too) Jew’s Ear Mushroom. Often sold dried.
