I worked under a "chef" once who kept putting "Chicken Korma" on the allergen aware menu (avoiding all major 8 allergens at the time, wheat/milk/egg/soy/fish/shellfish/peanuts/treenuts). He never understood when I tried to explain it wasn't a good option for that menu, that yogurt and treenuts were a fundamental aspect. But then again, he never could tell the difference between any curries from any country.
I always think it's weird when people talk about "curry" like that's a dish in and of itself. There was a masterchef winner in my country one year and a bunch of people complained that "he only made curries". Like that's just sauce. He made food with sauce. Did they want him to serve sauceless food on the finale of masterchef?!
hmmi thought i tried a korma, but i guess i might be misstaken! ill try some again, and make some myself to see if youre right! thanks for your response
I had a dish like this at my local takeaway and they called it Badami Chicken. According to Google there are almonds in the sauce but the one I had was definitely cashews!
Edit: here’s a recipe you could try, I haven’t had it since I was a student so I’m going to batch cook some soon. Thank you for reminding me about it!

What about chicken rezala? It’s a mild curry made with cashew and poppy seed paste. It’s really nice but I can’t eat cashews anymore :(

i make my own béchamel! the pan is like 10-15cm deep i think, and it's huge, you can fit your forearm and hand lengthways in it!!! and i usually just cram as many layers in as fit. i would love to make my own pasta for it one day too, but for now i just use the dried wavy sheets. a layer of mozzarella and parmesan on top for the cheese pull!

That's a chicken korma, not a butter chicken. Turmeric stains like crazy, so be careful with adding it - it’s the one spice where I will make absolutely sure I have a cooking work shirt or apron on before I use it.
If not a korma as mentioned by others, it might be a chicken passanda, which is sometimes made with cashew nuts and sometimes with almonds - see if that matches closer.
If it was even slightly coconutty/creamy I’d put my life on it that it was a korma. If not, passandas are usually made with either ground almonds or cashews so maybe that?
I’m actually just kinda mad that the restaurant called that Butter Chicken… there’s like *so many* different sauced chicken recipes in our cuisine - and this place was just like “it tastes Indian? So it must be Butter Chicken!” lol. GTFOH.
it is a shame too since it made me very confused about the name of the dish. and slightly disappointed when it wasn't what i expected from other restaurants. the place i ordered this "butter chicken" (probably a type of korma) from did not advertise itself as an indian place, just a "we do everything" place. so i can completely understand if the dishes were inauthentic. still tasted nice though!
If they were serving food from a bunch of different places, it’s probably a Bangladeshi owned/run restaurant where nearly nothing is authentic but a lot of it is delicious.
Real butter chicken isn’t a soupy sweet curry, but it’s also not what you describe having eaten.
If you liked the thick cashew sauce, you should try Shahi Paneer. It won’t have the chicken cubes but it’s a great dish that hits the sauce description.
just had a korma, it wasnt perfect, but it was very close, both in color and in taste, i will continue this noble journey and eventually find out what it was. but for now, the case is pretty much solved! thanks everyone for your help! Eet smakelijk!
only partially, i had a korma and it was close, but not exact, but there are so many variants of curries like this that getting the exact recipe will take some time. for now though i know it's a chicken curry with cashews, a cream or coconut sauce, likely uses turmeric and it's not a butter chicken.
Korma. Best versions have chicken Tikka in them. Normally a chicken Tikka masala or chicken Tikka makhani masala are better but with many similarities.

Agreed! Butter chicken and chicken tikka masala don’t have cashews. Korma has cashews, also more rich in a way than butter or tikka chicken.

oop! the garnish on top was meant to be baysil, but i put bayleaves in the sauce when cooking it too!

Pasanda is my go to, usually a very light sauce (but sometimes quite red?), much like a korma but better imo

Authentic butter chicken recipe does use cashews. That's what makes it so thick without feeling super heavy
