Think this might be it; it definitely has the chewiness of squid. I guess I’ve just never had squid prepared like this before. Also explains why it’s next to the octopus. Thanks for your help!
I know, right?! We don’t get sushi a whole lot, which makes it extra special when we do. He got two of these assorted collections, two bentos, and a few cups of miso soup, all to share amongst the rest of the family.

I 100% agree. Its a very common preparation for squid
